1 x 400g sheet shortcrust or puff pastry

3 cups of cooked vegetables of your choice

3 roma tomatoes, quatered

2 garlic cloves crushed

60ml (1/4 cup) olive oil

2 tablespoons chopped rosemary

2 tablespoons freshly grated parmesan


1. Pre-heat oven to 180, lightly grease a 23cm pie plate

2. Lay pastry into the plate, line with baking paper and rice and blind bake for 10 min. Remove paper and rice and bake for a further 5 min.

3. Toss all vegies with garlic, oil and rosemary, then fill pastry case. Dot with fetta and sprinkle with parmesan. Bake for 20 min, serve with a green salad.



11/2 teaspoons baking powder

3/4 cup blanched almonds

21/2 teaspoons vanilla extract Directions

Place flour, baking powder, sugar and almonds in a bowl, mix togethet

Add eggs and vanilla mix well to form a dough

Divide the dough into 2

Place dough on lightly floured surface and kneed each piece until smooth

Shape into logs and flatten slightly

Place the logs on a baking tray lined with non stick paper, bake for 35 min

Remove and allow to cool

Cut logs into 5mm (1/4 inch) thick slices and place on a lined baking tray, bake for a further 10-15 min until crisp

Serve with espresso coffee or liqueur



100g crushed unsalted peanuts

Ice-cube trays (or chocolate molds)


Melt chocolate and copha together in a metal bowl over simmering water

Fill molds 1/3 with melted chocolate, followed by 1/4 teaspoon Nutella

Top the Nutella with 1 hazelnut

Mix remaining chocolate with crushed nuts and fill chocolate molds to the top, refrigerate for 1 hour and turn out of mold
